Whatever local IPA was on tap was my go to bar order for many years.  It’s still among my favorites.

A beer designed to taste good after a long sea voyage from GB to India is one that has some resilience.

Wow, that's a shining endorsement!  Assam IPA, beer for smuggling Opium into China to force them to trade tea to England!  I'm sure they could fit that on a label.  Beats reading the abridged Reiheitsgebot on the Heineken bottle.

It also originally finished its fermentation on voyage,  so could end up rather strong.

Maybe it's my aging tastebuds, maybe it's the hot weather, but find myself gravitating towards golden ales these days, especially the more hoppy brews.

They also started putting (Moroccan) Lemon in it, to stave off Scurvy.

Yes, that’s where I’ve gone too after my lengthy flirtation with IPAs.

And Pilsners, and Kölsch‘s these days too.

The trendy thing now is Sours, and after a little resistance, I see why.  I look to have one or two of those once in a while the way I used to with a Stout or Porter.

It's proofed longer.  So, how long they let the Yeast go before they kill it.  Basically the same as Sourdough.  (This also raises the Alcohol content.)

What's in a "sour" beer to make it so?

I thought a lot of it had to do with using fruit in the brewing, but after I googled it, I also found that the use of wild yeasts and bacteria normally not added can give beers an intentional acidic (sour) taste.

A Lambic is a classic example, but the ones I’ve had lately come in all sorts.  It’s hit or miss with me flavor-wise, but some are excellent.

Oh, lambics I know - they leave the mash in an open container for the wind to blow wild yeast into it.

Kind of sad Rope.  Sorry you all had to endure that.  I can’t explain it, but that urge for progeny is undeniable.  So glad I had two kids.  I may be adopting a third.
