Instead of throwing out the burgers that get over-seared, at the end of the shift, those get chopped up, and made into the signature Chili.

That's why they sell chili.

I’ll add this to the things I learned today.  I never thought about it, but that makes sense.  Of course, making chili with hamburger is a capital crime in Texas.

I don’t get all fanatical about beans.  If you want them, fine.  It isn’t a hanging offense where I come from, but be careful, I know some Texans who would pistol whip you for less.

I’m with you on the fatty pork.  Shoulder or butt.   Throw in a piece of fatback.  The best chili is when you take all your left over meats, beef, pork, venison, and soak overnight in a marinade, then sauté before you put everything in a big pot, and simmer all day with your spices vegetables and chili seasoning.

I’m still making vichyssoise tonight.

We went to her sister’s house 25 minutes away last evening with her driving her new car to learn the way.  I asked ‘highway or backroads’ and was told backroads.  For now on the answer will be highway and stay in the right lane where there’s 10 feet of right hand shoulder.

She makes the same mistake my other wife did, positions her body in the middle of the lane not the car.  It must be fear of the oncoming traffic, but they passed us 6-8 feet away.  Meanwhile I’m in the passenger seat watching her side mirror missing mailboxes by inches.  I tried to politely give her some constructive criticism, but she wouldn’t believe me.  At one point she slipped off the road in a rut and had to fight the car back on the road.

The one positive was this nonbeliever is now embracing her Catholicism.  As the mailboxes were whizzing by potentially decapitating me, I began crossing myself and whispering prayers.

I drove home.

One thing I love about Texas (One of the few) is that even the county roads have a paved shoulder, that's practically a 4th lane (On both sides) and people pull over to let you pass.  On the right, on 2 lane highways (Which are more like 4 lanes.)  It's just polite, and rather weirdly polite, for the Texas attitude, and the way people drive, pulling immelmanns on the spaghetti interchanges.  I hate driving in Tecas, but back when I was traveling by bike/trailer on a recumbent, I basically had a full width bike-lane from city-to-city.

They don't have that in Portland.

Oh I land on those too nearly every time around the board.  And the one time I had any hotels, which were on St. James/Tennessee/New York, she landed on Community Chest in the middle of them nearly every time just missing my hotels and drawing a card that gave her $100 or $200!

And when you sell your houses and hotels back to the bank to pay her, you only get half what they cost.

She’s cute though, so whadda ya gonna do?

That game is notorious for breaking up families.
